Fruit and Nut Granola

You know how I love a good granola recipe that isn’t sugar laden and yet hits the spot. Well this is just that. Packed with healthy fats, fibre and complex carbs, it’s a perfect start to your day. I make full batches of this wonderful vegan granola recipe and store it in an airtight jar. It’s also a gluten free granola recipe which is an added bonus.

Ingredients

300g gluten free oats

50g sesame seeds

50g pecan nuts

50g almonds

50g sunflower seeds

50g desiccated coconut

50g flaked almonds

50g walnut pieces

50g pumpkin seeds

100g dried apricots

100g sultanas

100ml maple syrup

100ml organic rapeseed oil

 

Directions

Line a baking tray with greaseproof paper and heat the oven to 280 degrees F/ 140 degrees C

Mix all the dry ingredients together in a bowl.

Add the maple syrup and rapeseed oil and stir to combine ensuring that all the dry ingredients are thoroughly coated.

Pour on to the baking tray and spread out into a single layer so it cooks evenly.

Bake in the oven for 10 mins, stir to ensure the granola at the sides doesn’t burn and return to the oven for a further 10 mins.

Remove from the oven when it is golden brown. Remove from the baking sheet to allow to cool or it will continue cooking. Once cool stir in the apricots and sultanas.

Store in an airtight jar and enjoy with fresh fruit, your choice of milk or yogurt or as a topping to overnight oats or a smoothie.
