Super easy chocolate bark recipe

I love making my own simple chocolate bark at this time of year. I especially like making healthy treats that feel indulgent but are also doing me good, rather than relying on shop bought sugar for my pick me ups!   After all Christmas doesn’t have to leave you lethargic and wondering when it will ever stop, there are some great tasting dishes you can cook.

 

You can add whatever mix of fruit and nuts you want to make this super easy chocolate bark recipe feel as festive, or not, as you feel is necessary. If nuts aren’t your thing, just miss them out and add broken up biscuit pieces or just dried fruit. Or if dried fruit isn’t for you, add the nuts and simply make a chocolate nut bark instead.

 

Ingredients

100g cocoa butter

1 tbsp coconut oil

2-4 tbsp maple syrup depending on how sweet you like it

60g raw cocoa powder

60g dried fruit – I used cranberries

60g nuts – I used pecans

 

 

Directions

Line a baking tray with grease proof paper ad set aside.

In a saucepan over a low heat, melt the cocoa butter, coconut oil and maple syrup. Stir to combine then whisk in the cocoa powder with a balloon whisk. Keep whisking until all lumps have dissolved.

Add the fruit to the hot chocolate mix and pour into the prepared tin. Set aside n a cool place, or the fridge, and allow to set.  

Once cool remove from the tin and break or cut into squares. Store in an airtight tin somewhere cool. Again I tend to put it back in the fridge but it can also be frozen.
