Ali’s super soulfood pancakes

Pancakes always give a breakfast the feeling of having a treat but now you can feel good about it too. Packed with energy, these chia and flaxseed super soul food pancakes really pack a punch. They are filled with healthy omega 3, fibre and protein. It’s quite literally rocket fuel for a plant powered diet.

 

Ingredients

For the flaxseed egg

3 tablespoons ground flaxseed

6 tablespoons filtered water

 

For the pancake

1 cup buckwheat flour

2 cups brown rice flour

2 ½ tablespoons potato flour/potato starch

2 tablespoons gluten free baking powder

4 tablespoons flax seeds    

2 tablespoons chia seeds

1 teaspoon vanilla extract

grated zest of 1 lemon

2 ½ tablespoons coconut sugar

2 tablespoons coconut oil melted 

725ml filtered water

 

Directions

In a small bowl mix the ground flaxseed and 6 tablespoons water to form an egg like consistency. Set aside while you get all the other ingredients together.

 

In a large bowl or jug mix all the dry ingredients together.

Add the vanilla, coconut oil, flaxseed egg and mix into the dry ingredients adding small amounts of water as you mix. I use a balloon whisk for this.

 

Adjust the batter mix by adding small amounts of filtered water as needed. You may not need all 725 ml but you may need more to get the consistency you like. I like a really thick batter to make a thick pancake but be aware they won’t fold or roll if you make thick ones!

 

Heat a frying pan and add a ¼ tea spoon coconut oil. Once melted drop small amounts of the batter into the pan and cook. Once bubbles have appeared on the surface they are ready to flip over to cook the other side. 

 

Stack them in a warm oven until the family is ready to eat or make them as you go – this can be quite stressful if you can’t keep up with demand and believe me these will be in demand!

 

Serve with your favourite toppings.

 

Topping suggestions

Warmed Maple Syrup Blueberries or Blackberries (when in season)

 

Add your chosen fruit to a small pan over a low heat. Warm through for 1 – 2 minutes. This will release some of the juice. Pour over a small amount of maple syrup and continue to heat until you have a syrupy-berry mix. Serve warm

 

Maple syrup and lime

 

Grate a small amount of lime zest and the juice of half a lime over the pancake. Drizzle with maple syrup

 

Banana Chocolate Mash

 

Thinly slice a ripe banana. Spread a small amount of good quality chocolate butter/spread – we like Pip and Nut (or make your own) - over your pancake. Top with mashed banana and maple syrup.
