This is so simple and you can prepare everything in advance and then reheat it when you want it making it a really quick supper for a busy evening when work and the kids activities take precedent.
Ingredients
500g organic turkey mince
2 onions
4-6 medium/large sweet potatoes
1 tbs Taco Seasoning (* see below)
400g Black Beans, drained and rinsed
Salt and pepper
Vegan hard Cheese
Olive Oil
Homemade Salsa or use a Jar of Salsa (* see below)
Jalapeno peppers to garnish
Homemade Taco Seasoning
Ingredients
1 tbs chilli powder
1 tbs ground cumin
1 tbs garlic powder
1 tbs onion powder
1⁄4 tbs cayenne pepper
Directions
Mix all the spices together and store in an airtight container.
Homemade Salsa
Ingredients
4-6 medium tomatoes (you can peel them if you like)
½ red onion chopped
1 garlic clove chopped
1 tablespoon cider vinegar
Juice of talk a lime
Good handful of fresh coriander chopped
Directions
Add all ingredients to a blender and blend until chunk.
Note: To skin tomatoes add them to a bowl of boiling water and leave for a few minutes. The skins will begin to split. If this doesn’t happen puncture the skin with a sharp knife, it should then split. Wearing gloves to protect your hands (they will be hot) rub the skins of the tomatoes and they should come off easily.
Directions to pull it all together
Slow Bake sweet potatoes for 45 minutes to an hour until soft on 140 degrees (this can be done ahead of time and the potatoes re-heated)
Add olive oil to pan and brown mince in a large pan. When it is almost browned, dice onion and add to the pan.
When onions have started to soften, add taco seasoning, black beans and stir through salsa. Continue to cook to heat through for 3 -5 minutes.
You can prep everything to this point and put it all in the fridge to combine when you're ready to start lunch or supper if you want to make it in adavcne. If you're making it in advance, reheat the potatoes in the oven (takes about 15 minutes), then reheat the mince on the hob before combining as below.
When sweet potatoes are soft, remove and cut in half lengthwise. Scoop out the filing and stir through the mince mixture.
On a large baking dish or on a baking sheet, add a big scoop of the stuffing mixture to the middle of the sweet potato, evenly dividing the mixture among them.
Top with shredded Vegan cheese (if using) and return to the oven for 10 minutes or until the cheese has browned.
Top with jalapeno peppers for extra kick!
