Spiced Caramel Clementines

These are a super easy but super delicious alternative to stodgy puddings that are perfect in the winter when you may have had a hearty main curse but still want something sweet to end the meal. Packed with vitamin C and warming flavours, they are lovely eaten slightly warm or chilled. Pair with a dollop of coconut cream or ice cream for a perfect dessert everyone will love.

 

Ingredients

150m cold water +

120ml cold water

90g coconut sugar

½ t spoon all spice

9 clementines or 3 large oranges

 

Directions

In a saucepan, add the coconut sugar and 150ml cold water. Heat until the sugar has dissolved stiring to ensure the sugar doesn’t burn.

Once the sugar has dissolved, increase the heat and bring to the boil. Continue to boil until the liquid has reduced by half and you have a dark caramel coloured liquid.

 

Carefully add 1 tbsp of cold water from the 120ml you still have . Sand back as it may spit and splatter. Add the rest of the water and the all spice and stir ell.

 

Pour over the clementines and allow to marinate for at least an hour and overnight if you have time.

 

Serve on their own or with a dollop of coconut cream or ice cream.
